Are there only 8 placeholders to choose from? I would love it if there were other options like {{Current date}}, etc

Agreed. More options would be great for: current date, Cc'ed First Name, Cc'ed Last name, Cc'ed Full Name to list a few.

Adding this comment to track this topic on behalf of the customer in ticket #22758.
As mentioned by Rooney Polito already, having the Cc recipients Last name, Full name etc as a place holder is essential. I wanted to use Mailbutler to send out some software release notes to a group of users without each of them seeing the other recipients but with the current limitation this was not possible unfortunately.
